Healthy Banana Pancakes – Skinny Mini Pancakes

A banana pancake recipe you can make in just a few minutes! Scatter with blueberries, raspberries or chopped apples to enjoy a satisfying low calorie breakfast treat. It’s another recipe that I first encountered, on the Pacific coast, and this health-conscious recipe from the wild wooded west was created in what’s reputed to be the most health-conscious city in the United States of America, the city of Portland, Oregon.

There in the shadow, of the volcanic Mount Hood, surrounded by pine forests and fertile farmland, chefs make the most of local produce delivering some of the best food in the region, including this wonderful recipe. Ingredients

1 large ripe banana
2 medium free range eggs, lightly beaten
Pinch of baking powder
Dash of Vanilla extract
1 tsp Olive oil, for cooking
150g of raspberries, blueberries or chopped apples

Cooking Method

STEP One – Mash the Ripe Banana

In a medium bowl, mash 1 large banana with a large fork until it resembles a purée with no large lumps remaining.

STEP Two – Stir in the Free Range Eggs

Stir in 2 beaten free range eggs, a pinch of baking powder and a dash of vanilla extract.

STEP Three – Heat the Pan

Heat a large pancake pan or non-stick frying pan over a medium heat and brush with ½ tsp olive oil.was

STEP Four – Drop the batter on to the Hot Pan

Using half of the batter, spoon two pancakes into the frying pan, cook for 1-2 mins each side, then tip out onto a plate. Repeat this process with another ½ tsp olive oil and the remainder of the batter.

If your exercising stricter portion control and you want skinny mini pancakes, put smaller dollops of batter into the frying pan.

STEP Five – Serve with Fresh Fruit

Top the pancakes with the raspberries, blueberries or chopped apples.

If you’re not on a diet or cutting back for Lent, you can serve these wonderful fluffy flour-less pancakes with Canadian maple syrup, Devon whipped cream, banana slices or some other indulgent topping of your own choosing.

Bananas were first found in South East Asia, in the Indian subcontinent. They were brought west by invading Arab armies around 325 B.C. and the cultivation and trade in the fruit spread out from Asia Minor to north Africa and southern Europe. The were then carried to the New World by the first Italian, Spanish and Portuguese explorers and missionaries that went to the Caribbean. The mass production of bananas started around 1835 and really took off in the late 1880’s as demand increased.
